The grapes are hand-picked in the Izmail district to preserve their integrity and prevent damage. Harvesting is done into small crates of up to 13 kg, which prevents excessive pressure on the berries. To maintain quality and freshness, the grapes are transported in refrigerated trucks at a temperature of around 10°C, preserving their natural aroma and acidity. After delivery, the bunches are separated from the stems, and the crushed berries are sent for cold maceration. Combined with post-fermentation maceration, this allows for the gentle extraction of bright aromas, rich color, and complex flavor components from the berries, which form the basis of our wine. Each bottle reflects the uniqueness of the terroir near Izmail, combining the purity of nature, the skill, and the traditions of grape growers and winemakers. A minimalist approach with minimal mechanical intervention is also adopted. The rich wine is aged for 12 months in oak barrels that previously held Whiskey, giving it a unique and distinctive character.
